Broccoli and Cauliflower Salad

This is a great summer salad for BBQs or camping. It can be made ahead and keeps for a couple of days. The ingredients can be bought at a local farmer’s market for the freshest taste.

Let’s get started shall we?

INGREDIENTS

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded Cheddar cheese
  • 6 slices bacon
  • 1 cup mayonnaise
  • 1/2 cup white sugar
  • 2 tablespoons white wine vinegar

DIRECTIONS

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
  2. In a medium sized salad bowl, layer in order the broccoli, cauliflower, eggs, cheese and bacon.
  3. Prepare the dressing by whisking together the mayonnaise, sugar and vinegar. Drizzle dressing over top and serve.

Tortellini Casserole


Yet another quick and easy, very delicious recipe sure to please everyone around you!

Let’s make some tortellini casserole!

First grab the following ingredients:

2 (10 oz) containers refrigerated alfredo sauce (of your choice, I use Buitoni)
1/8 tsp black pepper
1 (20 oz) pkg refrigerated green and white mixed cheese tortellini (again, use whatever you prefer, but I use Buitoni)
1 (10 oz) pkg frozen chopped broccoli, thawed, drained
1/2 C. Garlic and Herb bread crumbs
1 TBSP olive oil1.

Now I realize some people out there may feel the need for some MEAT with their meal. I’ve used crumbled bacon myself for this casserole, and I have a friend who adds cut up chicken to hers. Whatever floats your boat people.

I’ve also been known to add grated Parmesan cheese and wheat germ to the bread crumb/olive oil topping. Shh, don’t tell my kids!

Heat Oven to 375.
In med. sized bowl stir together alfredo sauce, 2 cups water and pepper.
Pour 1 cup sauce mixture into bottom of 2 1/2 quart shallow casserole dish.
Arrange half of tortellini (uncooked) in single layerover sauce, sprinkle with broccoli.
Pour 1 1/2 cups sauce over top.
Repeat layering.
Cover with foil.
Bake for 45 minutes. Remove from oven, heat broiler.
In small bowl stir breadcrumbs and oil together. Sprinkle on topof casserole.
Place under broiler until crumbs are golden (1 to 2 minutes)
